Wasn't sure if it would get watery.

I am glad you liked it. It is a very simple and frugal recipe.

I am not sure about freezing it since my 15-year-old stepson was living with us, so there was no such thing as leftovers. If you do freeze it and it gets watery, it should make a very good potato soup base.
