Thank you- I did know that, only because I did the low carb thing (very successfully I might add, and just before it became faddish). I was surprised when I saw that label, but then thought about it and I guess it shouldn't have surprised me.

The protein in it more than balances the carbs, or at least my blood sugar says so lol. I do use whole milk, raw when I can, and I think that may make a difference in absorption rate of the carbs? I don't know, but skim milk 'feels' different to me as far as blood sugar goes.

 
Good. Yes, the lack of fat in skim milk speeds up the glycemic rate

and uptake of sugar in the milk (in your body).

One good thing about fat, huh? ;o)
