and everyone really enjoyed it. I put it under the top broiler for a minute or so to crisp it up a bit. It was so easy, and the chicken would be so versatile. You could easily make this into a sandwich or chicken parm.

I cheated (it was one of those days) and served it with medium shells, that I boiled and added two stalks of broccoli, cut into small pieces, and boiled for the last minute with the noodles, then drained. And then, this is the part I hate to admit, I put them all back in the pot and poured in a jar of Alfredo sauce, along with some freshly grated, okay no, it was one of those refrigerated grated parmesan cheeses, and combined them. It turned out not bad, but actually, my husband said good (I am so happy he didn't say great). It was a good meal when I just didn't have the energy to cook a great meal. Everyone liked it, ate it, and I have leftovers that will be eaten.

But, the chicken was really good and that is what saved this meal. And I will make this again. It definitely deserves to be in the T and T.

Jerry's Scrumptious Parmesan Chicken

My husband typically makes this - but whenever I teach a cooking class to women/men who haven't cooked much - we make this recipe. So good and easy. Also wonderful left over. And most people can't believe how moist it is (by not cooking the chicken to death!) 6 SERVINGS

1 cup seasoned breadcrumbs (Progresso or other)
1 cup freshly grated Parmesan cheese
2 tsp. oregano
2 tsp. basil
1/4 tsp. cayenne
1 stick butter
6 boneless chicken breasts, pounded to even thickness(1/4 inch or so)

Preheat oven to 425 F. Line rimmed baking sheet with tin foil (for easy cleanup. Otherwise spray sheet with cooking spray).

In shallow bowl, mix breadcrumbs, parmesan cheese, oregano, basil, and cayenne. In another shallow bowl, melt butter in microwave.

Dip chicken breast, one at a time, in butter. Let excess drip off. Place buttered fillet in breadcrumb mixture; coat both sides evenly. Lay coated chicken fillet on baking sheet. Continue with rest of chicken breasts.

Place baking sheet in preheated oven for approximately 10 minutes.

Remove and enjoy!

And I save 'Bravo' for you for your quick meal that everyone enjoyed! I'm always impressed by my lil' sisters creativity with prepared/convenience food. She somehow manages to make a meal fabulous by mixing a little homemade with a little bottled/frozen/etc. convenience food. I think it's an art:)

I am trying to redeem myself today by making a pot of beef barley soup. I just roasted some beef shanks, onions and celery in the oven, and put the pot on the stove to simmer away. I had a lot of leftover mac and brocolli, so with that, I am going to slice up the rest of the leftover chicken, add some more veggies, and mix with some of my homemade pesto for a "new" dinner later this week. Look out Sandra Lee! lol.
