If you have an abundance of tomatoes in the garden, why not can some salsa to enjoy during the winter months........ I have posted a recipe in T&T under freezing and canning. It is really great and tastes freshly made. I used all homegrown veggies. Cilantro could be added, lime juice, etc, let your imagination be your guide.

 
How timely for me! sounds wonderful use for the box of tomatoes I just picked yesterday. What is>>

canning salt? How is it different than other kitchen salts and is it in the canning section or near the other salts? I don't think I've ever noticed it.

 
Canning salt

Luisa, canning salt is non-iodized. I found it near the canning supplies in the grocery store, but you could also find it near other salts in the spice section. If you can't find canning salt you can use kosher salt which is also non-iodized.

 
It's a great idea, Judy - however one thing I've never attempted...

and pretty sure I won't, is canning. And I can't even tell you why?

But I definitely make great use of the abundence of tomatoes (this isn't going to be a great year for us...not compared to years past. That being said - all 15 plants are bearing fruit. Although the 2 cherries are going gangbusters). I oven-dry them and freeze them and take them out throughout the year to add to savoury tarts, etc.
