ISO: ISO Detailed recipe for Spinach, Garlic, and Feta Linguine

I know, it "should" be simple enough, but I am sure if I try and duplicate it, it won't come out as good.

I had this in a restaurant over the weekend, and I would love to know how to make it myself.

Start with cooked linguine, I'm sure, and toss it with spinach, a little garlic, and olive oil - then top with feta.

But can anyone suggest how to make a sauce for it? Wasn't really creamy, but definately more than just oil. Thanks!

 
Saute garlic in evoo. Add spinach and some dry white wine - cook until spinach is just done and wine

is reduced. Can also add some pasta cooking water and/or broth instead of or in addition to the wine. Red pepper flakes can be sauted with the garlic. (Some additions: tomatoes, mushrooms, olives, etc).
Add cooked pasta to sauce, add feta, and toss just until cheese is heated.

 
Yes, it's great all right... I made a few changes this time

-Added lemon zest
-Sauteed mushrooms with the spinach
-Added halved grape tomatoes
-Used blue cheese instead of feta and then cooked it for about 2 minutes, then stirred, so it made a sauce.

All good tweaks! It was the wine that I hadn't used the first time around - made all the difference in the world!! Thanks again Meryl!
