recommendation to buy an aluminum-cored heavy pot (posted to thread #1129), I broke down and bought a Viking that I’ve been eyeballing for a long time…(4.5 quart 7-ply 18/10 SS interior/exterior, oven safe to 600°F, and has a lifetime warranty).

As a bonus, I got 10% off as it was a display model, the only one left. I just love this pot!
