I would love to hear what people make for supper after work. Something that's delicious but easy. Please give me your favorites. Thanking you in advance.

 
2. Starving Student Chicken

Starving Student Chicken Source: Chicken Soup For The Soul Cookbook
1 to 1 1/2 ponds boned, skinned chicken breast
1/2 cup sake or wine
1 pound penne pasta or linguine
1 tablespoon butter
1/2 cup olive oil
8-10 minced garlic cloves
1/2 - 1 teaspoon crushed fried red chili flakes
1/2 to 3/4 cup minced parsley
grated Locatelli or Romano Cheese
Cut chicken breast into small pieces Sprinkle with the sake or white wine and marinate for 2-4 hours. I don't normally marinate in the wine I just skip it. It still taste great.
Cook pasta according to package directions. Rinse and drain in colander, toss with butter to keep pasta separate.
While pasta is cooking,in large frying pan heat the olive oil, minced garlic and chili flakes to taste depending on how hot you like it.(It becomes stronger in flavor as it stands)BE CAREFUL NOT TO BURN GARLIC! Turn heat up and add chicken, reserving the marinade. Cook until chicken is no longer pink in center.
Add the cooked pasta to the frying pan and season to taste with salt and pepper. Stir in any remaining marinade and minced parsley. Cook a few more minutes. Serve immediately.

 
REC Kriss's Pockets

KRISS’s POCKETS (Serves two)
Kriss is my DH. I made this up years ago, and it’s still a favorite at our house - simple and satisfying.

2 whole pita bread loaves
1/2 lb ground beef
1 small onion, chopped
4 oz. mushrooms, sliced
1 green pepper, chopped or 1/2 C chopped and blanched broccoli
1 oz. sliced black olives (optional)
1/2 to 1 jar of Marie’s Creamy Italian Salad Dressing (find it in the refrigerated section or use Caesar Dressing)
1 T thyme
1/2 tsp salt
1 tsp pepper
1 small chopped tomato

Brown ground meat; add onion and green pepper. Cook a few minutes. Add mushrooms, cook 5 minutes more, then drain, and cool down about 5 minutes. Add dressing and mix with seasonings and olives. Fill pocket bread with mix and chopped tomato. Delicious!

Those weekday night when I haven't set something in my crockpot, I seem to make spaghetti and meatballs a lot. It seems to take under 1/2 hour from frozen ground beef to the table.

We always have leftover sauce, which makes for a quick reheat the next time we have it.

Also do weeknight meals on the Forman grill, as well as chicken/pork stir fry, cold subs, and omelets for dinner.
