ISO: ISO easy make ahead menu for girls night out

I am having about 6 good friends over on a weeknight and want to make a nice meal, but one I can do ahead. Maybe with a main dish I can make ahead and pop in the oven. Any ideas?

Joe, I also make these with broccoli, chicken and cheese sauce

and add a little mozzarella in each crepe. very good.

I went to a fruit market today in search of the right eggplant to try, and bushel on floor and ones on table were not firm, sort of soft, so...will make your eggplant parmesan when I find a good eggplant. Thanks for tips.
