ISO: ISO easy savory snack, ok for diabetics

My school has a tradition in which the teacher (me) having the birthday brings something to eat for the morning break. (If one doesn't want to acknowlege being a year older, one keeps it to oneself and doesn't bring anything.)

One teacher is diabetic and makes all sorts of nasty comments if cookies or other sweets are brought in.

Please, what can be made-ahead easily and served quickly? One tiny microwave is available, along with an over-crowded fridge.

Oh, and I have to work until 9:00 the night before. Is this impossible?

 
Anna, my cookbook software has oodles of diabetic recipes...you say savory, but I wonder if you

would be interested in granola or muffins that you make ahead. Or are you looking for an egg dish.

I found a carob ball similar to my fudge balls if you want that recipe too, though, likely she'll think it's not for her since it has chocolate and fruit in it....it is in a diabetic recipe though.

There's a 4-ingredient ball made of corn flakes, peanut butter, honey and coconut. Let me know if you have a flavor or what type item you are thinking of.

Hummus in celery sticks or cucumber slices with hummus on top (roasted red pepper hummus tastes good on the cucmber).

Or peanut butter or almond butter on cucumber or in celery sticks.

Pesto Mayonnaise with Jicama or Bell Pepper Wedges....bread sticks for

the non - diabetics-you could serve it in a Red Bell Pepper- how festive looking for Xmas that would be.....

when I can serve them warm from the oven.
I did hummus not long ago, so will skip that.
I love the Mediterranean Biscotti so will try to do them Monday afternoon and just seal them well until Tuesday. The pesto mayo is a great make-ahead idea so I may do that as well. Jicama and other veggies should be perfect! Thank you so much!
