ISO: ISO Fabulous Pea Salad Recipe

The lady that made my man's family's pea salad for the last 40 years of

Christmas dinners is too old to make it. Unfortunately NONE of the women in

his family ever thought to get a recipe. I could expect that from a man, but

this family has 3 grown women who took it for granted. Dad asked if we could

try to duplicate it. I have only had this man 2 years, and for the life of me,

I cannot remember much of the ingredients. It has peas, onions, pimento, a creamy

dressing, and that's all I can remember, exept that it was to die for.

 
I do not have a written recipe, but make mine the same as my potato salad, except---

I do add pimentos. Frozen petit peas, chopped onion, celery, hardcooked eggs, pimentos, bit of pickle relish, bit of dijon mustard and the mayo. Salt and pepper to taste.
You can thaw peas ahead depending on how long before serving time.

No recipe here either but here's what I do>>>

I use frozen peas, thawed, small dice cheese (I actually like velveta here but use what ever hits me) sliced green onion and mayo, salt & pepper.

 
Mine has peas, crumbled bacon, cashews, sliced green onions

a little chopped celery, Mayo or sour cream or a mix thereof, a dash of sugar and sometimes grated cheddar- It's always a big hit- Always add the cashews right before serving, or they WILL get soggy!!!!!

 
This is our version too. Sometimes I add diced red pepper for festive color and water chestnuts.
