The tree is loaded/ripe/I can reach them and my first thought is jam, but other ideas appreciated too. The tree has both kinds.

Annie Jackson's Plum Cake
Servings: 12

Ingredients:

1/4 pound butter
1 cup sugar
2 eggs
2 cups flour
2 teaspoons baking powder
3/4 cup milk
1 teaspoon vanilla
1 1/2 pounds Italian plums, (12 to 15) seeded and cut in half
Topping:
1/2 cup sugar
2 teaspoons cinnamon
3 tablespoons butter


Directions:

Cream butter and sugar. Add eggs and beat well.

Sift flour and baking powder. Add the flour mixture alternately with milk and vanilla to the sugar-egg mixture . Be sure to begin and end with the dry ingredients.

Pour the batter into a greased and floured 13 x 9 in. pan

Place the plums cut-side up on top of the batter. Sprinkle the entire surface with the sugar and cinnamon mixture for the topping. Dot the plums with the butter.

Bake at 350 degrees for 45 minutes. The cake is done when it is brown and jumps back when pressed with a finger.

Notes: Excellent cake for the fall.

 
If the purple plum is a Santa Rosa plum, you cannot beat a full-sugar. . .

packaged pectin recipe. Santa Rosas have very sweet meat, but the skins can be crazy-sour (and aromatic), so use the skins.
