ISO: ISO fondue recipes and "how to"

I had my first cheese fondue a few weeks ago and now I'm hooked. I asked Santa for a fondue pot and hope to use it New Year's eve to do a cheese fondue as an appetizer and then later a chocolate fondue for dessert. Any recipes?

Also - any special tips, tricks, notes?

Rec: Cheddar Cheese Fondue and Swiss Cheese Fondue

Cheese Fondue

1 1/2 cups dry white wine
1 tsp lemon juice
4 cups cheddar cheese, grated
1 Tbs cornstarch
2 Tbs butter
Salt and FGP
Pinch of nutmeg

Place all ingredients in a saucepan or fondue pot. Cook gently, stirring the whole time until the cheese has melted. Taste and season with S&FGP. Pour into a fondue pot (if necessary) and take it to the table.

To prepare Swiss Cheese Fondue substitute Emmenthal (Swiss) for the cheddar or mix it half and half and add 2 Tbs Kirsch to the mix.

Things to dip: cubes of bread, pineapple chunks, raw mushrooms, whole baby corn, cherry tomatoes, carrot or celery chunks, strips of bell peppers, water chestnuts, savory biscuits, cauliflower or broccoli florets.

When I have fondue at my friend Nicole's house, she serves her's with a green salad dressed with shallot vinaigrette. She also stops half way through the cheese pot and we all take icy cold shots of Kirsch!!
