While I make homemade past all the time, I need a good easy foolproof recipe that works in say a food processor or mixer to use in my first teen cooking class coming up in two weeks. I want to test some that are more 'specific' than the way I make it by pouring flour on the counter and making a well. I think that is fun but too intimidating for teen beginners.

Egg Pasta


2 cups unbleached flour
3 large eggs
¼ teaspoon salt, optional
1 to 2 tablespoons water, if necessary

Insert steel blade of food processor. Place 2 cups flour, eggs, & salt in bowl. Process until thoroughly blended 3 to 5 seconds. With machine running, add one to two tablespoons water thru feed tube. Process until dough forms a ball. If eggs are large you may not need water. Once dough has formed ball, let dough spin around bowl 15 to 20 seconds.

Roll dough ball into flour. Cover with plastic wrap and let rest about 30 minutes.

 
I used this T&T rec for years for catering and teaching classes, MCM

PASTA (serves 4)

2 C flour
2 eggs
3/4 tsp salt
1 T olive oil
1 T warm water
In food processor mix flour and salt then the eggs, oil and water. Process and let dough rest an hour.

Depending on the size of the eggs, the type and age of the flour, the humidity, you may have to adjust the amount of flour or liquids a bit. Dough should be soft and elastic.
