Hi everyone,

If you responded to my post a this weekend about a T&T frosting or icing recipe for gingerbread cakes, would you please post your response again? My original post was lost but I'm still hoping for your help.

I have a really cute gingerbread cake pan from my family and will be making two gingerbread cakes this weekend (one box of cake mix doctored up with more spices makes 2 cakes!), a boy and a girl! But I don't have a frosting recipe other than a vanilla buttercream - would like to decorate the cakes with cinammon red hots for buttons and raisins for eyes, and any other decorating tips are appreciated! I promised my dear beau's little girl (she's smileys/bigeyes.gif that we would make them last Saturday, but we were so pooped from shopping all afternoon and didn't get home until 5 so we are baking them this Saturday - no fail!

Someone else posted Sugar Baby Icing from Penny's sugar cookies...

After adding extra powdered sugar to some, you pipe a border (dam) around areas and then flood it with the thinner, tinted icing. It smoothes out beautifully. You could do skirts, aprons, pants, anything and get great detail. You can even write with this stuff. I've augmented other details with melted confectionary disks.

Used oil-based candy tints found at JoAnns crafts because I wanted to use it with the basic icing AND to tint the melted confectionary disks.

I know you're doing a cake, but with a child, it might be more fun to do details than use a thick tasty icing.

This is the best cookie icing I have ever
used and it hardens nicely for bagging but
is not rock hard like royal icing. You will
love it.

Sugar Baby Frosting

1 32 oz. pkg. confectioners’ sugar, sifted
1/3 cup evaporated skimmed milk
1/3 cup white corn syrup
1 teaspoon pure vanilla
1/3 cup water, boiling

Combine milk, syrup and vanilla in a
saucepan over heat and add boiling water.
Blend together with electric mixer. Add
confectioners sugar and continue mixing
until smooth. The frosting consistency is
similar to a glaze.

Color with powdered food
coloring for decorating cookies. You may
purchase the powdered food coloring at cake
decorating specialty stores, Walmart cake
decorating department, or Hobby Lobby cake
decorating department.

Heather is looking for icing for cakes, not cookies. I posted the sugar baby icing, but I think

it's too hard for gingerbread cakes. She needs a cake icing.

 
Oh, sorry I wasn't clear - I'm making gingerbread cakes, they are

approximately 9 inches long and 6 inches across. very cute!

I was thinking of a cream cheese frosting but little Natalie doesn't like cream cheese. I found a nice icing recipe using lots of citrus, but think something thicker might be nicer. I suppose I could make a vanilla buttercream but that just seems so boring, and I though you all might have something T&T that you like on gingerbread cakes.

By the way, thanks Marilyn, for reminding me about the Sugar Baby Icing, we did flower cut out sugar cookies this summer with this icing and it was delicious, and a lot of fun!

 
Thanks Meryl, this sounds great and I will try it tomorrow! think I'll use both lemon and orange,

why not? I'm going to 'pipe' it on to make a dress for the gingerbread girl, and jacket and pants for the boy - should be a lot of fun!!
