I just bought a gallon of cream and butter today so I can get started on making my gift boxes. Beware - people will beg you for candy every year if you share!

Did you see my post about making a knock-off 'scotch treat' like See's has? I don't remember when I posted it, probably about 2 years ago when Mimi first opened this wonderful place for us when Epi/Gail's went nuts. You basically cook the caramel to a lower temp so it's firm but stretchy (might have been soft ball) then make a puddle and put half a large marshmallow on top. Then you enclose the marshmallow with more caramel. (I use a large spoon) When it cools you can pick it up and roll it in waxed paper and twist the ends. They are TDF! smileys/smile.gif

Failed Candy Making Addicts of the World have NO WILLPOWER when they see candy recipes, remember! We CAN NOT see posts like this during holiday seasons without believing that this year...yes! this year will be different! This year the candy will reach hard ball and set!

We're weak! We haven't finished the FCMAW 3.14159-step program because we're still stuck on Step #1:
admitting we're powerless over candy.

Not only that...but we keep speaking in First Person Plural...and we're not plural!

(Although, speaking from a purely spacial viewpoint, there are enough Marilyn Molecules to make 2 whole persons...resulting in subgenus Marilyn Pluralpodidae within phylum Chocolatidae.)

 
I just played around and made it up....Might be a thread on EPI if it's not here....

I can't remember where it was for sure. We've talked about candy making a lot.

What I suggest is that you watch the caramel as it comes up to soft ball stage and use the cold water method of testing for hardness.

It seems it was around soft ball on the thermometer. I may make some again this year - they were over-the-top-good!

The candy will be kind of sticky and you can kind of roll it up on the waxed paper sheets when you twist the ends up. Wish I could remember exactly how I did it but I can't, other than what I've said.

It was easy, though!
