...and the family thought it was great!
I used full-fat coconut milk (that's what I had on hand) instead of lite, but otherwise made it exactly as written.
The only think I'd do different next time is to drop the strawberry preserves in the filling and use sliced strawberries layered in a strawberry/sugar puree. I would put a ring of frosting around the edge of the middle layer and schmear on the puree. Then top with sliced strawberries. The family found the flavor of the Knott's preserves too overpowering.
