The cake was scrumptious and so was the icing, so much so that....

the adults dived into eating the cake.
I am always intrigued at the kind of foods people put together for different functions in different parts of the world.
Here childrens birthday parties just aren't the same without Heineken beer...so imagine Heineken beer and sticky caramel butter 'horse' cake, enjoyed at the waters edge of a beautiful bay at riding stables.....

Thank you Gay, The caramel frosting REC:......

At the end I added loads more sieved icing sugar as I had my doubts it would hold up in the heat and still I should have added more. It was very tasty though, thank goodness.

Creamy Caramel Icing

Ingredients:
2 1/2 cups sugar, divided
1 egg, slightly beaten
1 stick butter, cut up
3/4 cup sweet milk
1 teaspoon vanilla

Directions:
Put 1/2 cup sugar in iron skillet and set aside.

Beat egg and remaining 2 cups sugar until moist and creamy. Add milk and butter and cook over low heat until butter melts.

Turn heat on under skillet on low and heat until sugar is light brown and runny.

While sugar is browning, increase the heat under the other ingredients, stirring constantly. When liquid mixture comes to a boil and the sugar is brown and runny, add the hot sugar to the boiling liquid mixture. Cook until it reaches the soft ball stage, about 10 minutes. Remove from heat. Cool slightly. Add vanilla. Beat until the consistency is right to spread. If it's too thick, add a little more milk.
This recipe for Creamy Caramel Icing serves/makes 3.5 cups

LOL! Marge

I kind of felt Harry Potter style with the icing.... as I looked at it held up.
After turning my back awhile I found it had menacingly slithered slowly down and out and away from the head.
Yet watching it awhile again it did not move.
Well, Huh! we got the better of it and we ate it all up!!!!

Thank you MoNJ...my daughter is healing steadily. The orthopedic surgeon is finaly back on island...

and has proclaimed that she should wear a medical back-brace for 3 months. During this time she must be completely careful with her movements.....hard on a person who captains yachts for a living. Oh well.
