when my little great-niece came to me at a party ( we finally had the party for my Dad's 90th) last night, with her empty order form, and her well rehearsed "spiel", How could I resist??? Of course after i ordered multiple boxes, THEN I realized they were $4 apiece!! Anyway, through this mornings haze, I vaguely remember telling her there was a recipe for pie using thinmints as the crust and inviting her over to make one with me-

Here you go Tammy. REC: Girl Scout Mint Cookie Pie (m)

GIRL SCOUT MINT COOKIE PIE

16 Girl Scout thin mint cookies
3 egg whites
1/8 tsp. salt
3/4 cup sugar
1/2 cup chopped nuts
1/2 tsp. vanilla
1 cup Heavy cream, whipped
shved chocolate (optional)

DIRECTIONS:

Preheat oven to 325º. Roll cookies between two sheets of wax paper, to make fine crumbs. (can freeze cookies for a few minutes for easy rolling)
Beat egg whites with salt until stiff and glossy. Fold in crumbs, nuts and vanilla. Spread in 8" pie plate. Bake for 35 minutes. Cool and refrigerate 3 hours. Cover with whipped cream and shaved chocolate. Serves 6

I have made this pie many times, using Ritz crackers and nuts instead of cookies. The basic recipe has been around for years. This seems to be a nice variation. I would use mint chocolate for the shavings.

This sounds great! the one I was thinking of was more of a thin mint crust and

a "grasshopper" like filling- This one sounds really good and a lot easier for me to make with a 7 year old!
