We make these for traveling to the cottage and for breakfast. Very kid

friendly.

1 1/4 cups old-fashioned rolled oats

1/4 cup raisins and or dairy free chocolate chips

1/3 cup dried apricots, finely chopped

1/4 cup dried papaya, finely chopped

1/4 cup dates, finely chopped

2 tablespoons slivered almonds

2 tablespoons sesame seeds

2 tablespoons honey or maple syrup

4 tablespoons smooth peanut butter

1 egg white or substitute

Lightly oil an 8 by 10 inch baking pan, and line with non-stick

parchment paper.

Put the oats in a large bowl. Add all dried fruit, nuts, and seeds. Mix

well.

Put the honey and peanut butter in a small saucepan and heat gently,

stirring occasionally with a wooden spoon until smooth. Pour into the

oat mixture and mix well.

Put the egg white in a small bowl and beat with a small wire whisk until

light and frothy. Add it to the oat mixture and mix with a wooden spoon

until the mixture sticks together. Spoon the mixture into the prepared

pan, then press it down with the back of the spoon, making the surface

as even as possible.

Bake in a preheated oven at 375 degrees for 15 to 20 minutes, or until

the top is golden and feels firm to the touch. Remove from oven and let

cool slightly in the pan before cutting into 14 bars. Let cool

completely before removing them from the pan. Store the bars in an

airtight container for up to 5 days. Makes 14 bars.

Here's a healthy cookies recipe you might want to try too....

Arthelene 's cookies

1/4 c. olive oil
1 c brown sugar
2 egg whites
2 c oatmeal
1/2 c whole wheat flour
12 tsp salt
1/2 c sunflower seeds
1/2 c pumpkin seeds, chopped
1/2 c pecans, chopped
1/2 c choc chips

beat oil sugar and egg whites together, .

stir flour, oatmeal and salt together, add to above mixture. Stir in remaining ingredients.

Spread out on a cookie sheet and bake 10 mins at 400

A friend of mine made these using honey in place of the brown sugar;they were so different and so good. When I tried making them like hers, weren't as good!
In any event, see what you think with the original....

 
sub for peanut butter?

We eat a lot of bars like this (from a box) and these sound good and easy. But what could I sub for the peanut butter? Could I just leave it out?

 
Thanks Marsha. I have the grandkiddies coming in July and they eat only healthy stuff. No TV too.

This recipe sounds like a winner and would pass the parents healthy test, if I watch the sugar/dried fruit content and maybe cut into smaller bars.

Do you know why the article lists "faba" bean as one of the veggies grown?? I was always under the impression it was "fava" bean. Is this spelling of the bean something Canadian, eh?

 
The botanical name is "Vicia faba". "Fava" is the Italian pronunciation...

But I admit, I didn't know this until you asked. I Googled it. :eek:D

It seems to be interchangeable, during my search I saw US sites use the term "faba" as well. I wonder if it's that botanists/horticulturists use "faba" and chefs use "fava".
