ISO: ISO: HELP with cookie recipe and whole wheat pastry flour

I have this recipe that I LOVE and have made a couple of times, but it calls for 1 cup of whole wheat pastry flour... now I know I've never bought ww pastry flour in my life, but can't remember what I subbed for it. The recipe is below -- can you see any reason why I can't just use all purpose flour for the whole wheat?? I currently have cake flour or all-purpose flour.

Gramma Winnie’s Yummies

Makes about 4 dozen

1 cup butter, softened

3/4 cup sugar

3/4 cup brown sugar

2 eggs, beaten

1 cup all-purpose flour

1 cup whole wheat pastry flour

1/2 tsp. baking powder

1/2 tsp. salt

1 tsp. soda

1 tbl. vanilla

1 tsp. almond extract

2 cups oats (regular or quick)

2 cups Wheaties cereal

1 cup coconut

1 cup chopped nuts

3/4 cup chocolate chips

Cream together butter and sugars. Add eggs and mix well. Add flours, baking powder, salt and soda; mix well. Add flavorings and rest of ingredients and fold carefully. Drop by large spoonfuls onto ungreased cookie sheet. Bake in preheated 350 deg. oven for 15 minutes. Remove to wire racks to cool.

 
That was the other way 'round... how to use ww pastry flour instead of all-purpose smileys/smile.gif

 
I saw a posting somewhere about replacing ww pastry flour with a 1:2 ratio cake flour to AP flour

so... that's what I did and it turned out scrumptious!

but wouldn't the advice have worked in reverse? (Although I have to admit I did read your post incorrectly the first time ;o)) Glad it worked out for you.
