Could anyone supply me with an excellent homemade dressing for a strawberry spinach salad which I am making for a Bridal Shower this Saturday?

Hubby loves the dressing that goes with this salad, and I've seen similar dressing to go with spinach and strawberries, so I'm sure it'll go together.

I usually add about 3/4 teaspoon of salt to the dressing, and I make the almonds with a little bit of sugar, in addition to the butter.

Love the combination of the spinach, sweet dressing, tart cranberries, and crunchy almonds!

Jamie's Cranberry Spinach Salad

Original recipe yield: 8 servings.
Prep Time:10 Minutes
Cook Time:10 Minutes
Ready In:20 Minutes

1 tablespoon butter
3/4 cup almonds, blanched and slivered

1 pound spinach, rinsed and torn into bite-size pieces
1 cup dried cranberries

2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
2 teaspoons minced onion
1/4 teaspoon paprika
1/4 cup white wine vinegar
1/4 cup cider vinegar
1/2 cup vegetable oil

In a medium saucepan, melt butter over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat, and let cool.

In a large bowl, combine the spinach with the toasted almonds and cranberries.

In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar, and vegetable oil. Toss with spinach just before serving.

Nancy - does it have to be homemade? Usually that's the best...HOWEVER.....

There is a dressing called BRIANNA'S BLUSH VINAIGRETTE (might be "blush wine vinaigrette")that is so outstanding...it doesn't stay on the store shelves. It has a picture of a strawberry on the mostly white lable. It's just made for spinach salad with strawberries ~ (and we add avocado and red onion too). Seriously, it just can't be made any better. Everyone loves it. I hope you give that a try. You won't be sorry.

The combination of Sherry vinegar and lemon juice works well in this REC: Strawberry & Arugula Salad

STRAWBERRY AND ARUGULA SALAD WITH HAZELNUT DRESSING

Serving Size : 4

1/2 cup hazelnuts -- (3-ounces)
1 tablespoon Sherry vinegar
1 1/2 teaspoons fresh lemon juice
1 teaspoon minced shallot
1 teaspoon sugar
2 tablespoons canola oil
2 teaspoons hazelnut oil
3/4 pound arugula -- (9 cups) tough stems discarded
1/2 pound strawberries -- (1 1/2 cups) trimmed and quartered lengthwise
1/2 cup mild fresh goat cheese -- (2 ounces) crumbled

Preheat oven to 350°F.

Roast nuts in a shallow baking pan in middle of oven until golden, 10 to 15 minutes. Rub warm nuts in a kitchen towel to remove skins (don't worry if some skins don't come off). Cool nuts, then coarsely chop.

Whisk together vinegar, lemon juice, shallot, sugar, and salt and pepper to taste. Add oils in a slow stream, whisking until combined well.

Toss together arugula, strawberries, hazelnuts, and dressing. Divide salad among plates and dot with goat cheese.

 
REC: Raspberry Balsamic Vinaigrette for Spinach Salad with Strawberries

Vinaigrette:
1 clove garlic, minced
1/2 tsp dijon mustard (i use more)
1/2 tsp honey (i use more)
2 TBSP raspberry vinegar
1 TBSP balsamic
1 TBSP brown sugar
1/4 cup oil (canola or grapeseed)
s & freshly ground p to taste

Salad
6 cups greens
1/2 cup crumbled chevre
1/4 cup flaked almonds, toasted
2 cups halved strawberries

Combine the vinaigrette ingredients, whisking in oil last.

Toss the greens with the vinaigrette. Place equal portions on chilled plates, top with cheese, strawberries & almonds. Sprinkle with a bit more freshly ground pepper.

 
I love my T&T version: Maria’s Strawberry Spinach Salad w/dressing

I've been asked to make this many times. It's a real favorite of mine. I once tried the highly rated Strawberry Spinach Salad over at allrecipes and found it to be very bland for my tastes. This has a nice tang without overpowering the strawberries.

Maria’s Strawberry Spinach Salad

1 small bag of spinach
1-2 baskets of strawberries, sliced

Dressing

1/3 cup veg. oil
1/3 cup apple cider vinegar
1/2 cup sugar
2 tsp. minced onion
2 tsp. sesame seeds
1/4 tsp Worcestershire Sauce
Dash Paprika

Mix dressing ingredents. Pour over the spinach and strawberries. Toss and serve.
