Hot weather meals

I've been relying on my crockpot . Did you know you can cook sweet potatoes in the crockpot? I had no idea! Wash potatoes and leave them wet & place in crockpot on low for ~ 6 hrs. depending on size of potatoes. My CP runs hotter than nl so I kept checking. I had leftover ham slices in freezer so we had sweet pots as a side to the ham with fresh raw veggies. Have used CP for all sorts of chicken recipes (thighs & breasts.).

 
That is a delicious tomato soup. One of our favorites and I make quesadillas

the same way. Some times I'll skip the salsa and add diced banana peppers. I love playing around with them. I love putting small diced cantaloupe in them too.

 
Traca and I were thinking the same thing! I was going to edit my post to say that I make a big

batch and have everyone add fixings. shrimp, chopped cucumbers, scallions, etc. I did this earlier in the summer. Always a hit. I find that the secret is the consume. It adds a different dimension to the soup.

 
Soba noodles with chopped veggies and Thai curry sauce

Our dinner tonight was a bowl of noodles tossed with thinly sliced / matchstick turnip, carrot and cuke with some chunked up cooked turkey and it was coated with TJ's Yellow Thai Curry Sauce.

Just right for a hot night.

 
I love the idea of a toppings bar for gazpacho. Need to do that one of these days. smileys/smile.gif

 
fish tacos say hot weather to me.we pan-fry the fish and away we go.maybe it's the margarita

beforehand that makes me think of hot and tropical
