We tried roasting a couple (ok, so they were REALLY huge), basting them with butter and garlic, then placing them on a rack over water. It took about 1-1/2 hrs. to get done through and were pretty tough until we got a couple of layers in. I know they do these in restaurants. It really was tasty, but just too tough and stringy on the outside.

 
deb, sorry, but first thought, was you cowering at the end of a table with artichoke at the end-hehe

hope some one has this method, I love artichokes and all vegetables roasted, but have not had these.

I microwave 2 artichokes for about 14-18 minutes. Directions>>

Cut off stem so artichoke sits upright, rub with cut lemon.

Cut off about an inch of the top, then cut off the leaf tips with scissors, rub with cut lemon.

Put about 1/2 inch water in microwave safe container that is large enough to hold the artichokes.

Put the artichokes in container stem-side up. Cover and microwave for 6-8 minutes for one and 14-18 for two or until a leaf pulls out easily after sitting for a couple of minutes.

COOKS TREAT: Peel the stems you cut off and saute in some butter. Squeeze a little lemon on them and eat with the kitchen door closed.
