any ideas of a nice menu. Her favorites are tacos, which would be fine, but she is diabetic. So when I think of tacos, I think of corn tortillas, grilled fish and shrimp, some sort of rice and some sort of bean salad or dish.

These do not go with a diabetic diet very well, so I am looking for some other ideas.

It will be a casual dinner consisting of 4-6 women. Any ideas??? Thanks!

 
My mom was living with us last month due to health problems, she was diabetic also and her favorite

meal happened to be tacos. I used ground turkey,but I could have used grilled chicken (she just preferred the ground meat). I fried corn tortillas in a little olive oil (just to soften). I also made guacamole, using avocados, a little canned (Herdez) salsa, lime juice, tomato, garlic salt and cilantro. I didn't make these, but you can also prepare barracho beans for a side dish, they are delicious.
Another idea might be grilled salmon or snapper. I grilled snapper in foil packets, brushing the top with a sugar free maple syrup/balsamic vinegar glaze mixture.
Texas Caviar is also a family favorite here, (black eyed peas, garlic, tomatoes, olives, green pepper, red onions, olive oil, lime juice and avocados.) This is an appetizer people ask me to bring all the time. (you can bake flour tortilla triangles for dipping.)

 
Instead of mixing up the taco salad, one idea might be to

Put individual bowls of the ingredients:
Lettuce
shredded seasoned beef
shredded low fat cheese
diced onions
chopped tomatoes
salsa

reduced fat sour cream
guacamole
corn chips

A taste dessert that is sugar free--sugar free ice cream with unsweetened berries or if needed, sweetened with Splenda.
