could I melt it down to cover pasta or maybe some other uses that you all could suggest. I don't want to just toss it but I really have know idea what to do with it all. Thanks. Would I have to dilute it in some way?

 
A pasta dish sounds good. You don't need to melt the brie - just cube it and toss with the hot

pasta. Here are two basic recipes you can use, or tweak to your liking.

TOMATO-BRIE PASTA

1 lb linguine
1/2 cup olive oil
1 brie cheese round (8 ounces), cut into 1/2-inch cubes
3 large ripe tomatoes, chopped
1 cup fresh basil leaves, thinly sliced
3 garlic cloves, minced
salt, to taste
1/4 teaspoon black pepper
1/3 cup grated Parmesan cheese

1. Cook the linguine according to the package directions; drain.

2. Meanwhile, in a large bowl, combine the oil, brie, tomatoes, basil, garlic, salt, and pepper; mix well.

3. Add the pasta and toss until well combined. Sprinkle with the Parmesan cheese and serve warm.

4 to 6 servings

PASTA WITH BRIE

1/2 lb linguine
2 tablespoons olive oil
1 teaspoon minced fresh garlic
1 cup packed fresh basil leaves, washed,dried and torn into small pieces
1/2 cup slivered sun-dried tomatoes (reconstituted if not oil-packed)
1/2 lb brie cheese, rind removed and cut into 1/2-inch pieces

Put water on to boil for pasta, then begin preparing other ingredients.
Cook pasta according to package directions; drain and return to pan.
Toss pasta with remaining ingredients and serve immediately.
Season to taste at the table with salt and pepper, if desired.
