ISO: ISO ideas for a bite-sized apple dessert that can be made a day or two ahead.

For a fundraiser, we have a case of apples donated that I will be turning into a finger-sized dessert. I was hoping to find some sort of apple-caramel bar or mini-turnover, but all the ones I have seen call for commercial puff pastry or filo dough or bottled caramel sauce. I want to avoid products like this, not just because I am a purist but because the budget is really tight. (Also I like to make my own caramel instead of using brown sugar).

Any ideas that call for lots of apple, are from scratch, and can be made ahead are welcome. Thanks!

 
Not a rec; but an idea... What about the mini artichoke tarts / quiches made w. apples? They are

make ahead and great served room temp. You could fool around with the recipe using blue cheese, maybe some walnuts?

 
Ooops just realized you were specific w/ dessert. I guess a cold apple soup would be out! : )
