I am working the polls again tomorrow (a 19-hour day!!) and the regulars have gotten together and decided to bring a hot meal to eat there since we expect it will be very busy ('hope so).

The main dish will be spaghetti and meatballs kept hot in a crockpot - there is a local spaghetti dinner every election day but we will be much too busy to go this year, so... - I'm bringing brownies with red-white-and blue sprinkles, and I also wanted to bring a salad. I was thinking a simple cole slaw but thought I'd see if anyone else had anything else a little more exciting.

We will have access to a microwave, a refrigerator, even an oven. Suggestions? TIA!

Definitely voting tomorrow. Anticipating long lines. Slaw --

Tonight I made a slaw from the shredded broccoli and carrots we have prebagged at our market. It was surprisingly good -- crisp and very fresh tasting I made a simple slaw dressing of mayo champagne vinegar, a little honey and mustard, cayenne pepper and dill weed. Wish I had added some chopped apple or crasins. But it was fast, easy and really good.

If you were all having fried rice or noodles I'd say add some ginger and sesame oil to the substituted vegetable oil and rice vinegar, and a little soy sauce. Top with some chopped roasted and salted peanuts.

 
I voted this a.m. at our elementary school and the PTA had a bake sale going. someone made the

loveliest star sugar cookies, coloring the tips with the palest blush of blue/red/white sugar. thin and crispy and so very appropriate. I called it in to the local radio show---he was getting all kinds of election info---busy lines, organized help etc, and he just loved my bake sale info. it was a lovely crisp morning---20 degrees and a new dusting of snow and just a good day to vote.

 
I ended up bringing cole slaw and store-bought shortbread cookies frosted with

white frosting and r-w-b sprinkles.

Spaghetti was delicious!!!!! Of course it didn't hurt that I only had about 100 calories until 2p, :eek:)
