and I thought there was a thread about it somewhere but I haven't been able to find it.

I am making Chipotle Mashed Potatoes and Mashed Potatoes with Caramelized Onions. For sauces and toppings so far I have Chicken ala King, Broccoli in Cheese Sauce, and a Mexican Beef-type one, crumbled bacon, green onions, cilantro, sour cream, grated cheese, chopped red onion, guacamole and salsa. Any other idea for sauces in particular? Has anyone else done this, any hints? I seem to recall another thread, but of course I could not find it on Gail's. Thanks!

Actually, in order to read anything isnide the responses, you need to go to the

thread through the new Epi search in order to see them. Even right clicking to open the response in a new window doesn't work for me. smileys/frown.gif

Garlic, White Cheddar and Chipotle Mashed Potatoes

Amount Measure Ingredient -- Preparation Method

36 garlic cloves
1/3 cup olive oil
5 pounds russet potatoes -- peeled, cut into
1-inch pieces
2 cups grated sharp white cheddar cheese (about -- (packed)
8 ounces)
4 ounces cream cheese -- room temperature
1/4 cup unsalted butter -- (1/2 stick) room
temperature
1 1/2 tsps minced canned chipotle chilies

Preheat oven to 350F. Toss garlic with oil in baking pan. Cover with foil; bake 30 minutes. Uncover; bake until garlic is tender, about 15 minutes. Cool; peel and chop.
Cook potatoes in large pot of boiling salted water until tender, about 25 minutes. Drain.
Transfer potatoes to large bowl. Add garlicand remaining ingredients. Using electric
mixer, beat mixture until smooth. Season to taste with salt and pepper. (Can be prepared
2 hours ahead. Cover; let stand at room temperature. Rewarm, stirring constantly,
before serving.) Makes 8 to 10 Servings.

Mashed Potatoes with Caramelized Onions

Amount Measure Ingredient -- Preparation Method6 Russet potatoes -- about 2 1/2 pounds
8 Tbsp. unsalted butter -- (8 to 10)
about 1/2 cup milk
salt and fresh-ground pepper
2 sweet onions such as Walla Walla -- Maui,
Vidalia or Texas Sweet are best.
1/4 cup Chardonnay.

Peel and quarter potatoes. Boil in salted water until tender. Drain and return to pan. Mash with 4 Tbsp. butter and add milk to the consistancy you like. Season with s/p and keep warm. While potatoes are boiling, halve the onions
lenghtwise and slice them thin crosswise. Melt 4 Tbsp. buter add onions and stir them occasionally until the begin to caramelize, about 10 min. Lower heat and add wine, and cook onions until they are golden brown, about 20 mon. stirring frequently. Stir the onions into the potatoes, adjust seasoning, and add more butter, if you like. Serve hot.

I also like one similar to one of the ones at Oprah's site. REC: Lemon Mashed Potatoes

The one at Oprah's site was:
Mashed Potatoes with Jalapeno and Lime (Lemon) Butter, which sounds good too.

Just soften 1/2 stick of butter, and add the zest of a lemon. Adjust the consistancy with a little lemon juice if you need to.

The flavor of the lemon with the starchiness of the potato is unexpectedly good! Really brightens it up.

 
Hi Andrea, another hint to navigate the old site, when you search using the link Dawn gave,

in order to open any replies within the thread, you need to right click on the reply link, and tell it to open in a new window. Otherwise, it takes you back to the archives in the new Swap format.

I've noticed that now, sometimes even this trick won't let me open the replies within a thread. smileys/frown.gif

 
Lisa - I noticed that too...

but I ALways get bumped back to the new swap format when I try to open a reply (subpost), not using the option to open as a new window. Maybe I will try opening a new window as you suggest, and see if it takes me to the replies within the post.
