I made a caramel-coconut-chocolate bar cookie that I baked too long. It was incredibly hard to cut, and the caramel could easily pull out fillings. But it tasted pretty good. I was thinking of making it into crumbs with my food processor and using it in a trifle of some kind. Any suggestions?

What about turning the bars into a dessert. Place a bar

in a bowl and microwave lightly, just to heat and soften a bit, top with a scoop of ice cream and drizzle with warm chocolate and/or caramel sauce, then top with whipped cream, if desired. Have done it many times, especially with brownies....so good.

Care to share your caramel-coconut-chocolate bar recipe? :eek:)

 
Hard cookies/brownies

Pat-NoCal thanks for the great tip! I like to put 1/3 cup unbaked oatmeal/chocolate chip cookie batter in a greased creme brulee dish and bake for about 12 minutes, until barely done at 350F, plate and top w/a scoop of ice cream. SueYoung in SoCal

 
use a grater to grate it over ice cream, pudding, to roll truffles in....

fold into whipped cream for dessert topping. Your food processor idea is also perfect!

 
Hmmmm, reading the recipes above about grating...

I thought, what about grating the bars, mixing like a graham cracker crust, and making a pie crust.

And then I thought, , chop it up, add it to a bread pudding, bake it and top it with cream and a whisky-butter sauce. Yes. That's what I would do. LOL

 
oh, just skip the in-between steps.. get comfy and dunk a bar in a shot of whiskey smileys/smile.gif

 
I made a crumb base for a cheesecake from too-tough date bars once

and it came out richer and sweeter than the graham cracker crust I usually make. I just ground them up in a mini-food processor for a few seconds, added butter, and a little sugar.
