ISO: ISO Info on beef feet. Has anyone ever used them? I have to make a pot of beef stock

this week and I had my eye out for beef bones. I saw beef feet in a market that caters to a mainly Mexican clientelle. I know cows have feet but I've never seen them in a meat case before. I assume I can use them for stock, but I'm curious what they are ususally intended for.

I am dying to get "The Whole Beast; Nose to Tail Eating"...

and I am dying for it - maybe I'll get it for Christmas because like you I have seen all sorts of parts of the cow and pig in the local ethnic markets lately and I am dying to try them. I mean after all they make pickled pigs feet and use them in the cassoulet as well as the English have long had dishes with trotters so why not beef trotters?

 
As I mentioned above, Marta my housekeeper is on vacation, and my world is falling apart...

I count on her for information on all things Mexican, among other important things. Why would I suddenly discover beef feet north of the border within hours of her leaving for Mexico without her cell phone? Something Freudian going on here.

 
Beef feet will add alot of cartilage to your soup, which should. . .

render down and give a rich, silky mouthfeel to your soup due to all that gelatin from the beef feet.
