pork. I know she suggests slaw and beans, which I'm making, but I'd like a couple more sides. Any suggestions? I'm making the Choc. Sour Cream Bundt and Key Lime Pie (my sil sent me a bunch of limes and I froze the juice and zest) for dessert and the appys are covered, too.

I know this is a "summer bar-b-que" type meal but I'm sick of the deep freeze we're in and I'm trying to convince myself that spring is right around the corner.

 
Another good side keeping with the southern theme would be potato salad, or

corn on the cob pieces. Also, maybe some small rolls in case someone wants to make little sandwiches. Also, might I suggest forgoing the key lime pie and make a peach or blackberry cobbler instead? Don't forget the sweet tea (iced, of course!) and lemonade. Serve on a red-checkered tablecloth and you're good to go!

The other side I like to make is green beans--the

large pole style beans, sometimes called Italian green beans. they are available frozen and are absolutely delicious when cooked with a little onion and some bacon or ham.
Did I post my mother's baked bean recipe? It is definitely a cut above.

 
Potatoes Deluxe

Here's a recipe I served for a dinner with ribs, cole slaw and baked beans.

21b frozen hash brown potatoes thawed 30 minutes
1 cup diced onion
1 can cream chicken soup
1 lb sour cream
1 stick butter melted
8 oz sharp cheddar cheese
salt and pepper to taste
1 cup crushed potato chips

mix all ingredients, put in 9x13 baking dish. top with 1 cup crushed potato chips. Bake uncovered at 375 degrees for 1 hour

 
That would be perfect.I cook these a long time, uncovered

with sliced onion added too. It is the old southern style beans. I love crisp cooked too, of course, but this is good for these pole beans. Hope you can find them.

 
Mother's baked beans

4 1# cans pork and beans
1/2C brown sugar
1/3C yellow prepared mustard
medium onion, diced
1/2C ketchup (or BBQ sauce)
Bake uncovered for 2 hours @300*
If they seem dry, add a bit of water or ketchup and stir.
To be honest, these amounts are all approximate as I don't measure. But the secret to the recipe is to bake the beans long enough to absorb the flavors of the additions. Mother never put bacon on top as is popular, but have at it if you want.

 
The dessert I usually serve with BBQ is pecan pie.

Texas sheet cake is a good dessert also it the crowd is big.

 
One of my favorites from a Junior League cookbook.....

I've had this at many, many parties in Memphis. It's a TNT and easy, do-ahead side dish.

Oriental Coleslaw

2 packages beef-flavored ramen noodles, uncooked
1 16oz bag coleslaw mix
1 cup sunflower seeds
1 small bunch green onions, chopped (use only white and pale green parts)
1/3 cup sliced almonds, toasted
Oriental dressing (below)

Crush the dry noodles and combine with the coleslaw mix, sunflower seeds, and onions in a large bowl. Toss with the dressing. Sprinkle with the toasted almonds. Refrigerate overnight to blend flavors.


Oriental Dressing

1 cup olive oil
1/3 cup red wine vinegar
1/2 cup sugar
2 packets beef seasonings from ramen noodles

Combine all the ingredients in a jar and shake well.
