Heather, why not make some and leave out the Scotch bonnet pepper? Then use whatever
is your favorite hot pepper at whatever heat level you can handle.
Personally, I can't taste anything after the initial taste from hot, hot sauces...so I don't bother anymore.
My personal favorite hotsauce is "Tennessee Sunshine"...not too spicy, salty...perfect with hard-boiled eggs. Darn difficult to find down here compared with all the local Datil pepper sauces.
