I made it over two night's, we ate tonight. I had a wonderful chicken from the farm in the freezer and needed something to do it justice. This was it!!!! WOW!!! I made the brown stock too, with wings because that was the best the little Whole Foods could do the other morning. It too was amazing. I can't thank you enough for posting this. YUM!

 
That's wonderful news! I can't believe it took me until last week to try it. Now you're helping me

make up for lost time. What did you serve it with. I had leftover mashed potatoes the first night which were fine, but the second night I made a potato galette which was just about perfect.

Joe, I had some left over long grain and wild rice that was terrific smothered

with the gravy and I roasted some broccoli too. I am not much for cooking dinner week nights that's why it took me 2 evenings to pull it all together. (I started it an Inaguration thinking of Roosevelt's famous, "chicken in every pot" comment.) Maybe I could do a potato galette tonight, that sounds wonderful.

 
If you have Julia's Mastering...Vol. 1, check it out. There are a couple variations,

including a mushroom stuffing I'd like to try.

Yup. All I can say is MAKE IT. You will love it.

The thing about Julia and her recipes was that she wanted the recipes to work in all situations, with all kinds and kinds (levels of experience) of cooks. So she had a virtual army of testers. The recipes in her cookbooks work. No fear, no maybes. Just follow her recipes and enjoy.

 
How lucky you are for sure!! I would have loved to taken a class from her...

I don't own the the "Mastering" books because I always thought they would be too over my head. But now you and Michael make me think I might be able to handle some of the recipes in them. Thank you!

 
Barbara, the recipes are clear--just about foolproof if you follow her directions.

The lengthy directions are off-putting to some people but I have always loved all her reassuring details. The "Mastering" Books are an excellent resource to have on hand.
