Wednesday night do ahead or quick get together dinner. I know this soup is very famous but I have never had it or made it. I saw Ina Garten make this a while back and decided it was time to try it out. It was delicious and soooo easy. The little meatballs were fantastic and why I think it is a good help for you is the meatballs can be made in the morning and the soup takes about 15 minutes. I'm going to make up several batches of the meatballs and then freeze them. I did make a couple of changes to suit our taste. I didn't use the celery. We just don't like it in soups. And I didn't use the dill. It just didn't hit me right and I had the Big Guy taste it when he came home to see what he thought and he thought it was perfect just as it was. I had some yeast rolls and a green salad. Great meal.http://www.foodnetwork.com/recipes/ina-garten/italian-wedding-soup-recipe/index.html

Ah, I've been eyeing this one up for a while, think I will try it--thanks for posting!

Luckily I have an Italian store near work that carries it all the time. smileys/smile.gif

What I was able to get was links in casing which I just slit and removed the

meat. I would have taken it loose or in casings. I was just happy to find it.

Steve, did you use the dill? And if so, the amount it calls for? Did you

like the taste with it? I'm not sure why I just can't wrap my head/tongue around dill in it. Tell me it works and not to be afraid.
