Makova Zavin (Czech Poppy Seed Roll Cookies)
Cookie dough:
1/2 cup butter
1/3 cup sugar
1 egg
2 tablespoons sour cream
2 cups flour
1/2 teaspoon salt
1 teaspoon grated lemon rind
Filling:
1 cup ground poppy seeds (see note)
2 tablespoons sugar
1 teaspoon ground allspice
1/2 cup milk
1 tablespoon honey
To prepare cookie dough, beat together the
butter, sugar, egg and sour cream.
Place the flour and salt in a pile on a board
and make a well in the center. Add the
butter mixture to the well and work with the
finger tips to make a dough. Add the lemon rind.
To prepare filling, combine all ingredients
in a small pan. Bring to a boil, stirring,
and cook slowly five minutes, still stirring.
Cool to room temperature.
Preheat the oven to 350 degrees F.
Roll out the dough into a rectangle about
one-third-inch thick. Spread with the cooled
poppy seed filling and roll from the long
side like a jellyroll.
Place on a greased baking sheet and bake
about 45 minutes, or until done. Cool and slice.
Yield: About 2 dozen slices.
Note: Ground poppy seeds can be bought
already ground in stores specializing in
German, Viennese and Hungarian ingredients or
poppy seeds can be ground in an electric blender.
