ISO: ISO Marcella Hazan's minestrone recipe, does anyone have?

I cannot find my cookbook of hers, I think it's somewhere in my closet (Mr. McGoo would be proud).

There are a lot of knock-off recipes on the web but I would really like to try hers.

I have it. I'll give you the ingredients and the basic instructions but I don't have it stored

in a file to send you.

Minestrone Alla Romagnona

1 lb fresh zucchini
1/2 C evoo
3T butter
1 C sliced onions
1C diced carrots
1C diced celery
2 C peeled, diced potatoes
1/4 lb fresh green beans
3 C shredded Savoy cabbage or regular cabbage
1.5 C canned cannellini beans, drained
6 C Basic Home made Meat Broth or 2 C canned beef broth plus
4 C water
Crust from 1-2 lb piece of parm cheese (she says optional but I say
it's pretty necessary)
2/3 C canned imported Italian tomatoes with their juice
salt
1/3 C grated parm

The directions are the usual, sauteing the veggies in the oil. She does them in layers starting with the onion and ending with the cabbage. Then add the broth and tomatoes. Cover and simmer 2.5 hours, then add the beans. Soup should be fairly dense. When done, remove the crust and swirl in the parm. Like so many of these things it is best the next day. Keeps a week, she says.

I will make it a bit brothier though because I like that.

 
Here is a read only version via G books...but only working w/FF (REC meat broth inside)

I tried to open with IE given it allows me to save web pages as text in a way FF doesn't, but I couldn't even pull the page up in IE, so -hum.

Anyway, if you've got FireFox you should be able to read Marcella's text if you so choose. Her meat broth recipe used in this recipe is here and is the same except for a bit of condensed wording about freezing (Also, Marcella just says "salt" and this one reads 1 tsp salt.)

Oh that's great, I can read it just fine. Stock made last night & minestre is cooking! I feel

quite proud of myself for cooking. I'm shaking life a leaf from fatigue butnim not coughing and my tiny apartment smells good.

I cooked my own tiny white beans with 2 slices of bacon, and added the diced bacon to the soup. Since I can't eat potatoes I'm using farro.
