Rec: Cajun Skillet Beans
1 med Onion, chopped
3 garlic cloves, minced
3 celery stalks, chopped
2 red bell peppers, chopped
1 tsp thyme
1/4 tsp Black pepper
cayenne pepper to taste
1/2 tsp oregano
1 tsp basil
2 cups crushed tomatoes
1 Tbsp honey or molasses
1 Tbsp Dijon mustard
4 cups cooked black-eyed peas
Saute onions, garlic, celery, and peppers till soft. Add spices and cook until the onions are golden.
Add all other ingredients except the peas and simmer for 5 minutes, covered. Add peas and cook until the peas are heated trhough.
