You posted this link about a year ago and I made it for dinner last night. It is AMAZING! I highly recommend it. The only things I changed was to use green asparagus and skip the pat of butter stirred in at the end. (I figured I had enough fat with the drippings of the pancetta.)
I splurged on some fresh morel mushrooms and had to call 5 stores before I found some fresh favas. It was sooo worth the effort. And, actually, the dish comes together very quickly with only 1 pot and 1 baking dish (which probably could have been tin foil), to wash at the end. If morels are not available sub some other earthy mushroom or maybe use dried morels.
