to answer your question (which I just saw), no- the cheesecake will not slide off the chocolate. I probably have made this recipe 30 times and it has always turned out perfectly. You bake part of the crust dough on the springform pan bottom round then put the springform pan together and press the rest of the dough around the ring, sort of meshing it into the partially-baked crust on the bottom (hard for me to explain- I hope it is coming across) so the end result is one crust, sides and bottom, with no seams. Then you paint on the chocolate then pour in the batter. There is no way for anything to slide off- and when baked, the chocolate does not separate from the rest but just creates a thin layer. a thin delicious layer.
