will be serving honey baked ham, biscuits, curried fruit. Deserts and beverages are covered. Need ideas for some other finger foods or accompaniments for ham biscuits, something that is NOT labor intensive. Suggestions please? Many thanks.

 
How about a large variety of crudites since veges are so abundant now...

maybe some cheeses as well. I know that sounds so simple, but in this heat, that is what I would want to eat. The rest of your menu sounds perfect.

 
REC: Shrimp Mousse...So Good and Easy!

I had this at a 4th of July picnic and was very surprised to learn the ingredients. My DH and I were immediately addicted. My cousin got the recipe from the Deer Creek B&B Inn, Thomasville, GA.

1 can tomato soup
1/4 c cold water
1 c mayo
2 cans small shrimp, chopped fine or processed
1/2 c onion, finely chopped or processed
1/2 c celery, finely chopped or processed
1 pkg unflavored gelatin
a few drops of Tabasco or to taste
8 oz pkg cream cheese, room temp

Heat soup to boiling. Dissolve gelatin in cold water and add to soup. In large bowl, mix cream cheese w. mayo and Tabasco. Add soup & beat w. rotary beater. Add shrimp and veggies. Pour into mold (I layer first with saran wrap) and chill. Unmold onto platter and serve with buttery crackers or whatever you like.

 
Cucumber cups, stuffed tomatoes...

How about slicing cucumbers into thick slices, scooping out the seeds, and filling with a mixture of sour cream, dill, and onion

Or filling cherry tomatoes with tuna

Slicing a can of date bread (unless you have time and energy to bake some fresh!) with cream cheese rosebuds if you're handy at cake decorating

Mini-cream puffs filled with egg, shrimp, or chicken

Mini-quiches from the freezer section of the grocery store

 
bowls of smoked almonds, Gardetto mix, block of cream cheese with salsa or favorite chutney

wrap breadsticks with ham spread with herb cheese
blanched asparagus spears with ranch dip or viniagrette.

 
I'd rethink the devilled eggs. I WAS going to make them for a picnic last week....

but got the picture in my mind of a dozen or so hadboiled eggs in shatters as I tried to peel them. I'm never certain they are going to peel cleanly. That's an awful lot of egg salad! And yes, I've tried all the tricks. But sometimes they do, and sometimes they don't. I made that great blue cheese and nut dip in T&T Appetizers. Everyone loved it.

 
If you're able to buy them about a week ahead of using them hard boiled, aajay,

they will peel cleanly. It's the really fresh ones that cling to the shell.

 
Have you tried "Smokehouse" brand Wasabi & Soy almonds???..

They're new and absolutely fantastic!!

 
Ham is salty, so I wouldn't go wild on salty snacks....(except for the almonds suggested)..

The veggies and dip (dill?) sound good with some good nuts. You don't need a ton. How about spiced or candied pecans? YOu can buy them.
