Curious, I added small amount of fresh orange juice as a sub for some of the water in the rice...
I didn't want a really strong orange flavor, because the orange sauce for the chicken is very pronounced, so the subtle flavor in the rice worked well. I was in a really heavy orange mood at the time, and served a side of Roasted Asparagus With Crisp Shallots, which has orange zest in it.
I've made this chicken many times since I wrote my original notes, and of course, have served it with lots of other types of side dishes as well.
