The cake was wonderfully rich and moist. I filled it with a white chocolate ganache filling and then frosted it with a frosting made of: heavy cream, butter, sugar, coffee, and chocolate chips.
Here's the measurement for the chocolate frosting...
Unfortunately I don't have measurements for the white chocolate ganache - I just melted some white chocolate (about 4 oz. I think) and about 7 oz. of heavy whipping cream. Once cooled I beat until it thickened.
As for the chocolate frosting - this comes from Nick Malegeria (okay - I know I butchered his last name...can't quite remember it.):
1 stick unsalted butter
1 cup heavy whipping cream
1/3 cup sugar
16 oz. semisweet chocolate (I use Nestle chips)
1/4 cup coffee
1 tsp. vanilla
Mix together on low heat until melted and well mixed. Chill until thickened to spreading consistency. (Can then whip, if preferred, to a bit of a lighter frosting...but I tend not to whip it and just frost with the chilled and thickening frosting.
