Cyn, it's been a few years since I made this, but I remember it being very, very moist, so it may
not be a good idea to let it sit too long, although, I'm not sure if it would become any moister than it already is when taken out of the oven. Sorry I can't give you a definitive answer, but I do remember it coming out more like a bread than bread crumbs.
I've been thinking of making this again soon, since I've been getting some great tomatoes lately. If I do so in the next few days, I'll post a detailed description of the texture for you, and you can take if from there!
