In Search Of:
Michael's rice dish also made it to our table last night.....

with a few tweaks of my own.
I chopped and sauteed a huge Spanish onion, along with 10 ounces of sliced button mushrooms and some garlic. I then tossed in a package of baby spinach, the lemon juice and Mexican oregano.
At this point, I turned off the heat and left it sitting on the stove. (we had a dance rehearsah to get to)
When we arrived home, I cooked the cup of basmati rice, stirred that into the rewarmed veggie mix, then added about 1/2 cup of crumbled gorgonzola, since that is what I had.
The end result was a bit soupier than it might have been if I had finished the dish immediately, but since it sat for a while, the veggies were juicier.
It was a tasty, light supper for a Friday night.

 
have you ever tried it with orzo?

wanting to know if i can follow the recipe with orzo or should i pre-cook it?
