were still delicious. The spice flavor came through but not intensely. Had some snowbird friends who just got back from Florida bring some wonderful tomatoes so we made fresh salsa. An Amish friend came by with some sour cream she had made. Rolled it all together in tortillas with some Mexican cheese. We had a party in our mouths! Thanks for the recipe!

 
I notive the original recipe in Sunset uses carrots , plus the meat is finished off by roasting

so I wonder if there was a reason to delete the carrots and change the cooking method?

 
Yes to oranges, beer, marjoram, condensed milk etc., but Carrots? That's weird, LOL. I'm with Tammy

And, unfortunately for my waistline, I eat it weekly, too.

Cyn, with the possible exception of avocado or guacamole, and assuming the tortillas were corn, you served it perfectly. (If not, homemade sour cream should trump just about anything.)

...Mexican cookbook. The one I use doesn't have carrots.

There are traditional ways to serve this, and non-traditional, but no "incorrect" ways... as long as you and your guests were pleased. It sounds good to me!

To me carrots are a herb, I use them in so many things,add flavor,color,& balance to acid foods

 
Mine is the Sunset Mexican Cook Book published in 1969. I got the ninth printing in

1972. I was surprised by the addition of carrots.

 
My mom always added fresh grated carrots to her spaghetti red sauces, she said it

helped with the acid of the tomatoes.

 
I agree. Meat balls. Bordelaise. I think it gives a depth of flavour that creates a substantial

'bite'.

I have been struggling for the word,but I guess"rounds it out".with color and flavor is pretty close

 
Karen, re-reading this it looks like I was mocking you--sorry. It's just the idea of something as

healthy and virtuous as a carrot having any place in carnitas that made me laugh.
