In the instructions part you state: Measure 2 cups tomato juice; if less than 2 cups, add water. Reserve any extra juice for other uses....

Later on use say: Boil, ..... mixture is reduced to 3 cups....Do you mean that the addition of onion, lemon juice, cilantro, etc increases the volume to more than 3 cups so that it needs to be boiled off? TIA for the clarification

 
These are the instructions he wrote down. What I do is add the onion,...

...lemon juice, etc., and simmer for a bit to reduce and blend the flavors.

It is a forgiving recipe and you can use your judgement as to how much you would like it to reduce.

I do find that the onion adds quite a bit of volume to the dish once it is added. But, again, I don't watch it too closely. The idea is to not over-flow the pan when you add this mixture to the tomatoes in the next step.

I was confused about that too...

then I simply ignored and used my own judgement:)

We thought the dish was very good!

thanks for the additional information.

I may make this for seder doubling the recipe as it can be served at room temperature, i.e. made ahead of time, and will add a nicely spiced dish to the meal. I like to try new sides and desserts every year.
