I was remembering last Christmas and how some of us were kicking way back on baking and other preparations. You said you were going 'whole hog' this year! How's it going?

By accident this last year I deleted my recipe folder so have been rebuilding it from scratch. yikes! I did a search but didn't find your favorite spritz cookie recipe. Was it the Whipped Shortbread recipe from your cookie site?

LOL! I was optimistic last year. ;o)

Haven't done a thing yet! Yes, Whipped Shortbread is on my site but it originated with a post to my now-defunct (because a hacker defaced it and erased much of the data) Cookie Exchange forum. Don't know who posted it originally, but it's not mine. It IS a great recipe though!

Sorry Gayle, HERE is the recipe. REC: Whipped Shortbread

I didn't post it because I read your post to mean that you had already found the recipe on my site. Yes, my favorite spritz recipe is Whipped Shortbread, and here's the recipe:

Whipped Shortbread

1 pound butter
1 cup powdered sugar
1 teaspoon vanilla
pinch salt
1/2 cup cornstarch
3 cups flour

Preheat oven to 350 F. Cream together butter, icing sugar, vanilla and salt. Gradually add cornstarch and flour. Whip with an electric mixer until fluffy. Place into a cookie press and press out cookies on cool baking sheet. Decorate with candied cherries or dragees if desired. Bake 12-15 minutes. Let cool for 2 minutes on baking sheet, then remove to wire rack to cool completely. Store in an airtight container at room temperature.
