ISO: ISO Mincemeat Pie (no meat/suet)

My best friend recently passed away suddenly. Her husband mentioned she always made him a mince pie for his birthday "I guess I'll have to figure out how to make it myself." Well, that just sounded so sad...I've never made a mince pie, or whatever hard sauce is. I do know she mentioned a friend of theirs always made him the old fashioned meat/suet version for christmas "and I never had the heart to tell her neither of us liked it." So, I know they like the None Such jarred stuff, but I'm guessing she likely doctored it up...I mean you don't just pour the stuff in a crust do you?

I'd like to make him a pie for his birthday next month, but as you can see I have no idea about birthing no "mincemeat" pie.

Thoughts? Recipe?

 
I "used" to think my favorite was from the New Orleans cookbook. But I made it last year and it

ended up way too thick. Great taste, though. Used it on bread pudding--flavored with brandy.
