I'd like to feature a green topped (mint) frosted cupcake on my blog but I'm not sure how to go about making the frosting? Simply add mint extract and food coloring to a butter cream recipe? I'm not a fan of mint but saw a mint cupcake while in NYC over the weekend that made me swoon:)

Also - any ideas for a 'summer' cupcake to feature on the blog? I have a cupcake favors category on my site so I like tying the recipes and category together!

You can buy white mint chocolate chips and melt those. Other ideas:

Just a little peppermint extract in buttercream, or you could infuse mint in

your syrup if you're making true buttercream and not confectioners sugar type.

Nothing says summer to me like peaches. What about a peach cupcake? Smitten Kitchen does one with brown sugar frosting & cream cheese.

 
Another terrific mint chocolate frosting is simply laying a peppermint patty on the

cupcake while it is still warm, then swirling to frost when it has partially melted.

for a summer cupcake, I saw on some blog(but can't remember now) putting a whole strawberry in the

center of the cupcake batter and it bakes up around the berry. a nice surprise. It can be iced with vanilla icing that has some strawberry puree added for a nice pink touch. I'll search a bit for the recipe.
