ISO Normandy recipes

I am looking for recipes from Normandy, France. I understand they use a lot of fish and seafood, but also poultry.

Normandy is also the apple capitol of France, so I understand they use a lit of Apples and apple cider in their cooking. Apart from that, I din’t know much about the Normandy kitchen.
